One of the challenges of living on an island is the need to occasionally come up with what we generously call "found cuisine." What's this, you ask? Well, it's what happens when you use your Yankee ingenuity and general cooking skill to throw wierd stuff together to make real food.
Example: Good friends extend gracious invitation to attend 4th of July Lobster cookout. Price of admission? Make appetizers. For 20 people. Gak. In a kitchen that contains a wide collection of low carb wierd shit, This is a challenge, but not insurmountable. Here's what I did:
Kitchen contents: flatbread, tomatos, Schwann's caesar frozen shrimp (don't gag, they're really good.) various logs of saturated fat laden delicious italian sausage products, olive tapenade, artichoke pesto, fresh mozzarella, mixed greek olives, feta cheese, tortilla chips, green beans, garlic and olive oil, rosemary
1. Caesar shrimp cocktail (Afore mentioned caesar shrimp thawed served on a bed of romaine lettuce with caesar dressing dipping sauce.
2. Greek nachos with 9 layer dip (chips with feta, black olive tapenade, artichoke pesto, chopped tomato, oregano, red onion, mushroom, green pepper dip with greek (okay, so it's Italian) sausage.
3.Fresh mini pizzas on flat bread (sliced tomato, pepper salami and fresh mozzerella and oregano leaf.
4. Cold blanched green beans with garlic paste and olive oil (thanks Deb!)
5. Warm mixed olives with Rosemary (like it sounds)
With a little presentation magic, this is good stuff. Hush falls over crowd. Cheeks puff in delight. I am INVICIBLE! (Ok, so no one poisoned. )
Just goes to show you, necessity is the mother of invention. Gotta go... cheese bubblin'
